Cottage Cheese Pancakes?

Cottage-Cheese Pancakes
These pancakes, created by Goulding, are not only packed with high-quality protein, but also lighter and fluffier than the classic version. Serve with a bit of butter and sugar-free syrup.
1 c cottage cheese
2 eggs
1/2 stick butter, melted
1/2c milk
3/4c whole-wheat flour
1 Tbsp baking powder
1 Tbsp sugar
1 tsp salt
1/2tsp nutmeg (optional)
In a large bowl, stir together the cheese, eggs, butter, and milk. Add the flour, baking powder, sugar, salt, and nutmeg, and blend lightly until just mixed. Grease a griddle with cooking spray and place over medium heat. Put a large scoop of batter on the griddle and use the back of a spoon to spread it out evenly. The pancake is ready to flip when you begin to see small air bubbles form, about 3 to 4 minutes. Flip and cook for another minute or 2. Makes about 12 4-inch pancakes.
Per pancake: 97 calories, 5 g protein, 8 g carbohydrates (1 g fiber,2 g sugar), 5 g fat (3 g saturated)


I love pancakes, so maybe this healthy version will be great for me! I'll let you all know after I work up the courage to try them! =)

I lost 3 pounds this week, but I'm not going to move my "weight loss ticker" until I get back on Monday. The weekends are rough on me. It is the only time I get to see my boyfriend in our "long-distance" relationship, so when we are together we go out a lot. Eating just seems to be the natural thing to go out and do here. I wish the weather would warm up so we could at least go out for a walk or a bike ride before eat a bunch of food that is bad for us!

Today, I'm all ready up to my 2 liters of water a day goal! (yay!!)
For breakfast, I made another breakfast burrito, but this time since I was just cooking for myself, I made it with 2 egg whites and 1 regular egg. I've heard/read that the yolk is where most of the fat in the egg is stored, so hopefully this was a healthy alternatives (I've read so many different websites with different opinions, I'm getting slightly overwhelmed). I was amazed to see how different eggs cook when it is mainly just egg white. My eggs didn't fluff up at all and the flavor wasn't there quite as much, but puttin in a little bit of pepper and onion made up for all of that. Overall, a very yummy way to start the day. I'm thinking next week, I might try cooking enough for 2 or 3 burritos and wrapping them in plastic wrap for later in the week. I'm ALL about the easy meals.

Thanks for the comment! I'm really big on eggs. My normal breakfast is a couple of egg whites and 2 tablespoons of hummus on a high fiber English muffin. Here's how I make my egg whites: crack whites into bowl, whisk with a fork, microwave for 1 to 1 1/2 minutes (1 for 1 egg white, 1 1/2 for 3). That's it. Easy.
From what I've read, there is some goodness in the yolk, but I'm going with the weight watchers points on this one. 1 egg white = 0 WW points. 3 egg whites = 1 WW point. 1 egg with yolk = 2 WW points.
I saw that you were wondering about the protein in soy sauce. The soy is the protein. If you haven't discovered soy products yet, you should. They're packed with protein!

Oooh I'm curious about those pancakes. I heart cottage cheese so I'd probably love them. The fiance however has a strange aversion to anything mushy and white. Cream cheese, sour cream, etc. and cottage cheese of course. No wonder he's so thin. :-)
